Husky
Breakfast Burrito
2 tbsp. Green onions, thinly
sliced
2 tbsp. Red bell pepper, finely chopped
1 large Egg
1 large Egg white
Dash salt
Dash pepper
1 large Flour tortilla
1 tbsp. Fat-free cream cheese
2 tbsp. Salsa
Combine first 6 ingredients.
Place a small nonstick skillet coated with cooking spray over
medium-high heat until hot.
Add egg mixture and cook,
without stirring, until egg mixture begins to set on bottom. Draw a
spatula across bottom of pan to form large curds. Continue cooking
until egg mixture is thick but still moist; do not stir constantly.
Spread cream cheese and salsa onto tortilla, add mixture to tortilla
and then roll.
Yield: 1 serving
